Summer Mango Salad

This is absolutely my favorite summer salad recipe!!
This Feel-Good summer salad recipe is made with the most delicious collection of vibrant, seasonal, simple ingredients. It’s great as a main dish or side salad. Make your salad stand out at your next bbq.
Summer Mango Salad;
3 mangoes,peeled and thinly sliced or diced*
1 avacdo, slice or diced
1 red Capsicum, thinly sliced or dices
1/4 red onion, thinly sliced or diced
1/4 cup fresh mint (thinly sliced)
1/4 cup fresh coriander (roughly chopped)
Mango Salad Dressing:
zest of 1 lime
1/4 cup lime juice
squeezed, about 2 limes
2 tsp white sugar
1/8 tsp red chilli flakes*
1/4 tsp salt
1 tbsp olive oil
freshly ground pepper
Combine all the ingredients for the Mango Salad in a large bowl. Toss to combine.
(cover and refrigerate till ready to serve)
Combine all ingredients in small bowl, drizzling over the salad and tossing to combine.
Firm but ripe mango are best.
Chilli flakes are optional.Don't add dressing till ready to serve.
