You can make these easy Sticky Date Puddings with Butterscotch Sauce as little mini ones or you can whack all of the pudding mixture together and bake it as one big pudding. Either way, this ultra moist, super delicious will impress everyone. 
INGREDIENTS》
280g pitted dates, chopped 
1 tsp bi carb soda
1 cup  boiling water
1/4 cup brown sugar 
80g unsalted butter , softened
2 eggs , at room temperature
1 1/4 cups plain flour 
1 1/2 tsp baking powder
SAUCE INGREDIENTS》
1 1/4 cups brown sugar
1 1/2 cups thickened cream 
1/2 tsp vanilla extract
70 g unsalted butter
INSTRUCTIONS》
Place chopped dates in a medium size bowl, sprinkle over baking soda. Pour over boiling water. Stand 15 minutes, then mash well with a potato masher (should resemble porridge) 
Preheat oven to 180°C, prepare baking dish/muffin tin/ pudding moulds by grease well with butter. 
In a medium bowl place butter and sugar, Beat until combined and smooth.
Add eggs (1 at a time) beat until incorporated.
Add flour then sprinkle baking powder across the surface. Mix until flour is incorporated. (Batter is look similar to cookie dough)
Add dates, mix quickly until dates are well incorporated into the batter. 
IF MAKING 1 LARGE PUDDING Pour batter into cake pan. Bake for 35 minutes (until skewer inserted into the centre comes out clean)
Remove from oven , using a skewer a poke about 30holes all over the surface. Pour over 1/2 cup Butterscotch Sauce, leave to soak for 10 minutes.
IF MAKING INDERVIDUAL PUDDINGS 
Pour batter into pudding moulds/ large muffin tin only fill 3/4 of the way up.
Bake for 20minutes, or until skewer inserted into the centre comes out clean.
Remove and poke about 10 holes in each pudding. Spoon over 1 tbsp of Butterscotch Sauce per Pudding. Leave to soak 10 minutes.
Turn pudding moulds/ large Pudding upside down on serving plate. Serve warm with remaining warm sauce and ice cream or cream.
BUTTERSCOTCH SAUCE 》
Place all ingredients in a saucepan over medium heat. Once butter is melted, stir, then bring to simmer for 2 minutes.stirring occasionally then remove from heat. Serve warm.
