Simple One-Pot Roast Lamb for a Family of 5

This is one of those easy meals where everything goes into one oven dish and does the work for you. Perfect for a family dinner, and the leftovers can be turned into lunches or a pie the next day.

Ingredients

  • 1.2–1.5 kg lamb, cut into pieces

  • 4 potatoes, chopped

  • 2 sweet potatoes, chopped

  • 2 onions, cut into wedges

  • 4–6 cloves garlic

  • 2–3 tablespoons olive oil

  • Salt and pepper

  • A few sprigs of fresh rosemary

Method

  1. Preheat your oven to 180°C fan forced.

  2. Place the lamb, potatoes, sweet potatoes, onions, and garlic into a large oven dish or one-pot baking dish.

  3. Drizzle over the olive oil.

  4. Season well with salt and pepper.

  5. Add the rosemary sprigs over the top.

  6. Give everything a quick toss so the oil and seasoning coat the meat and vegetables.

  7. Put the lid on the dish.

  8. Bake in the oven for 60 minutes at 180°C fan forced.

  9. Carefully remove from the oven and check that the lamb is cooked through and the vegetables are tender.

  10. Serve hot as is, or with steamed rice on the side.

Serving Idea

Serve straight from the dish for an easy family dinner with minimal washing up.

Leftovers

Any leftovers can be:

  • packed up for lunches the next day

  • turned into a quick lamb pie
