Peanut Butter Chicken

Receipe for 1 keto style, this dish is easy & takes 15 minutes to prepare & cook

Ingredients:

100g Raw Chicken 
50g raw mushrooms 
50g zucchini 
2 large handfuls baby spinach 
1 large handful of microgreens 
2tbsp peanut butter 

Salad dressing: 

1tbsp full cream
1/2tsp seeded mustard 
1/2tsp mustard 
1/2tsp vinegar 

Directions: 

Slice chicken & place into a pan to fry with coconut oil, once chicken is cooked add chopped mushrooms, zucchini & spinach into the pan. Last peanut butter & 1 tbsp water and let simmer for a 3 minutes.

Plate up with salad & add dressing.

Add a good pinch of Himalayan Salt & Pepper to taste.
