🍗 ONE-POT MARINATED CHICKEN & VEGGIE BAKE 🍽

Easy. Family-friendly. Perfect mid-week dinner.

Here’s one of our go-to dinners at home, a throw-it-all-in, set-and-forget meal using fresh veggies and marinated chicken. You only need one big baking dish, and dinner is sorted!

INGREDIENTS:

* 2kg marinated chicken (any flavour you love)
* 150g green beans
* 150g cauliflower
* 150g broccoli
* 300g squash
* 2 onions, sliced
* 3 large potatoes, thinly sliced
* 4 baby sweet potatoes, thinly sliced

METHOD:

1️⃣ Prep your dish

* Grab a large baking dish and line it with baking paper.
* Slice your potatoes, sweet potatoes and onions.
* Spread them across the bottom of the dish to form your base layer.

2️⃣ Add the chicken

* Place your 2kg of marinated chicken evenly over the potato/onion layer.
* This helps the flavours soak down into the veggies.

3️⃣ Top with veggies

* Slice or dice your green beans, cauliflower and broccoli.
* Scatter them right over the top of the chicken.
* Pop the lid on your baking dish.

4️⃣ Bake

* Into a preheated oven at 180°C.
* Cook for 45–60 minutes (depending on your oven) until the chicken is cooked through and the veggies are tender.

5️⃣ Serve

* We pop rice in the rice cooker so it’s ready at the same time — perfect to soak up all those beautiful juices.

TIP:

Let it sit for 5 minutes before serving so all the flavours settle. This recipe also reheats beautifully for lunch the next day!
