Mushroom & Cheese Puff Pastry Slice (dangerously easy)

Ingredients
* 1–2 sheets puff pastry (thawed)
* 2 cups mushrooms, sliced
* 1 onion, thinly sliced
* Olive oil or butter
* 150–200g Philadelphia cream cheese
* 1–1½ cups grated tasty cheese
* Salt & cracked pepper
* Optional: garlic, thyme, or chives
Step-by-step
1. Preheat oven to 200°C (180°C fan).
2. Cook the filling:
Heat a pan on medium heat with olive oil or butter.
Add onion and cook until soft.
Add mushrooms (and garlic if using) and cook until golden and all moisture has cooked off.
Season with salt & pepper. Set aside to cool slightly.
3. Prepare pastry:
Line a tray with baking paper.
Lay one sheet of puff pastry on the tray.
Lightly score a border around the edge (about 2cm in) don’t cut all the way through.
4. Spread Philly:
Spread a generous layer of Philadelphia cream cheese inside the border.
5. Layer it up:
Spoon the mushroom & onion mix evenly over the cream cheese.
Sprinkle grated tasty cheese over the top.
6. Top pastry (optional):
Either place another pastry sheet on top and crimp edges OR leave open-faced like a tart.
7. Bake:
Bake for 20–25 minutes until pastry is puffed and golden and cheese is bubbling.
8. Rest & serve:
Let it sit for 5 minutes before slicing.
