Meatball & Macadamia Salad - Keto Friendly

Receipe for 1 keto style, this dish is easy & takes 15 minutes to prepare & cook.
1 Small Clove garlic
20g Sweet Potato
60g Pumpkin (raw)
20g red capsicum
2 large handfuls leafy salad
2 tbsp sour cream
30g Activated Macadamia Nuts
1/4 tsp coconut oil
Mince garlic & add to mince then roll in hands into a ball. Fry meatball in pan with coconut oil, add sweet potato & capsicum & fry until all cooked.
Thinly slice pumpkin & plate up with leafy salad. Place meatball & vegetable on salad then top with sour cream & macadamia nuts.
Add a good pinch of Himalayan Salt & Pepper to taste.
