Loaded Cheese Sweet Potato Fries

These Loaded Cheese Sweet Potato Fries are easy to make and so great for parties, as a side dish, and any Friday night! An occasional indulge doesn't have to be unhealthy. So start with sweet potato fries and top with cheese, bacon, avocado and sour cream.
INGREDIENTS>
Six small sweet potatoes, sliced into thick chips1 Onion, diced
6 Bacon rashes, diced
Kidney beans, 300g tin, drain and rinse
1 Cup reduced grated cheese
2 Avocados, sliced
2 Shallots, diced
Sour cream, to top
Olive oil
Salt and Pepper
INSTRUCTIONS>
Preheat oven 180. Line baking tray with baking paper .
Bring medium size saucepan of water to the boil, add sweet potato chips and allow to boil for 2 minutes. Remove set on paper towel for five minutes.
Place sweet patato on baking tray, coat with olive oil season with salt and pepper, bake it tender and starting to roast.
In a frying pan on medium heat add onion, bacon and beans. Fry till bacon is well cooked.
Remove sweet potato from oven and place in an ovenproof serving bowl.
Top with onion bacon and beans mix and grated cheese. Return to oven until cheese has melted.
Remove and top with Sour cream, avocado and shallots.
Enjoy, guilt free!!!!
