Honey, Apple & Ginger Teacake

Honey, Apple & Ginger Tea Cake by T2T Food Blogger Kathryn
Everyone should have a delicious cake recipe up the their sleeve. Light, sweet and simple, I call this a teacake because it just seems like the perfect cake to serve with a freshly brewed cup of tea.
INGREDIENTS》
200g  butter, softened
75g raw sugar
180g  honey
3 large Eggs
250g self-raising flour
1 tbsp ginger, fresh or ground
1 tsp ground cinnamon
1 apple, cored and diced
TOPPING
1 apple, cored and sliced
50g honey 
INSTRUCTIONS》
Preheat the oven 160˚C, grease and line the cake tin with baking paper.
Combine the dry ingredients, adding a pinch of salt, set aside.
Using electric beaters, cream the butter and sugar together until light and fluffy.
Beat in the honey on low till combined, then the eggs, one at a time. (Add fresh grated ginger)
 
Add dry ingredients mix and fold into the creamed mixture.
Fold in the diced apple.
Tip the mixture into the tin and arrange the sliced apple over the top. Bake for 1 hour-1 hour 15 minutes, * till skewer inserted into the centre comes out clean, Cool in the tin.
Remove from the tin. Warm the remaining 50g honey in a pan or the microwave, and spoon or brush over the cake.
 
Cooking tip*
*cover loosely with a sheet of foil after about 40 minutes if it starts to look too dark on top
*if using ground ginger add to dry ingredients.
* mixture may look a little dry,like dough.
