Bursting with delicious aromatic spices and powerhouse flavours This family-friendly Spanish chorizo rice makes a healthy, filling, and affordable meal that everyone will love! Made with charred chorizo sausage, capsicum, and Spanish inspired spices. 
 
INGTEDIENTS》
450g chorizo sausage , sliced 
1 onion, dice
3 garlic bulbs, minced
1 red capsicum, sliced
3 small potatoes’, washed and diced
100g snow peas, sliced
2 limes, 1 juiced & 1 wedged
2 cup rice, medium grain, washed and drained
1L stock, chicken, or vegetable
2 tbs Isabel’s sweet chilli chutney
2tbs tomato paste
1 tsp each paprika, cumin and onion powder.

Sour cream
INSTRUCTION》
Heat 2 tbsp olive oil in a large deep, frying pan over a medium- high heat.  Add the sliced chorizo, cook until it starts to release its juices. Add the onions, potato, and garlic fry for 5 minutes, or  until onion is soft. 
Reduce the heat to medium- low and add washed rice and combine well for 2 min. Season with chutney, tomato paste, paprika, cumin and onion power.  Toss well.
Pour over the stock and capsicum bring to the boil. Reduce to a simmer and leave the rice to cook uncovered, without stirring, for 10 minutes. 
Sprinkle sliced snow peas over the top, drizzle the lime juice over the top. Now cover with foil and turn heat OFF. Allow to sit to 10 minutes.
Remove foil and toss gently, Serve with sour cream and a lime wedge.
