These cookies are perfection! Soft and chewy, with plenty of chocolate and macadamia nuts
in each bite. If you want a big, fat, chewy cookie then these are the cookies for you!
265g White Flour, shifted
1 tsp cornstarch
1 tsp baking soda
1/2 tsp salt
170g unsalted Butter, melted/ slightly cooled
3/4 cup Brown Sugar
3/4 cup Granulated Sugar
1 large egg + 1 egg yolk
1tsp Vanilla Extract
1 cup White Chocolate chips
120g  Macadamia nuts, roughly chopped.
In a large bowl, whisk the flour, cornstarch, baking soda, and salt together. Set aside.
In a separate bowl whisk the melted butter, brown sugar, granulated sugar, egg, egg yolk, and vanilla extract together until combined.
Pour wet mix into dry ingredients and mix everything together with a spatula until completely combined.  Fold in the white chocolate chips and macadamia nuts.
Cover mix, chill the dough in the refrigerator for 2hours.
Preheat oven to 175°c.
Line baking sheets with baking paper. Roll cookie dough into balls, about 1-1.5 tsp of dough, and place on baking sheets 5cm apart.  Bake for 12-13 minutes or until lightly browned on the sides. (centers will look soft) remove from the oven and cool on the baking sheet for 5 minutes, before transferring to a wire rack to cool.
