Chicken Schnitzel is a food staple in our family, but some time breaks the calorie bank. This juicy chicken breast, breaded in macadamia crumbs and fried until golden is one of life’s simplest pleasures.
Not only is it one of the easiest recipes you can make, it’s also one of the recipes you KNOW will be received well. Every. Single. Time.
INGREDIENTS》
1kg chicken breast, sliced in half. 
1 1/2 cups roasted macadamia nuts
1/2cup almond flour  
2 large eggs whisked
1Tbs english mustard 
Salt & Pepper
onion powder
garlic powder
cooking oil to shallow fry
INSTRUCTIONS》 
Sprinkle both sides chicken tenders with desired amount of salt, pepper, garlic and onion powder, set aside.
In a food processor, process macadamia nuts until they resemble large bread crumbs. 
Pour the processed macadamia nuts into a shallow bowl, add almond flour and toss together well.
Crack eggs into another shallow bowl, whisk together with the english mustard. 
Now to coat, dip each chicken piece into into eggs mix, then place in nut mixture until well coated, set aside. Follow with remaining chicken. 
Add enough oil to frying pan so bottom is nicely coated, When oil is hot but not smoking, add chicken pieces and cook 5-6 minutes a side, lowering heat when necessary. (Cook in small batches to avoid overcrowded the pan) 
Chicken should be crispy, golden brown and cooked through when removed from heat. Set on paper towel till ready to serve.
