Chia pudding is the perfect healthy breakfast or snack to meal prep for the week. It’s creamy, satisfying and laden with the goodness of wholesome ingredients. Yet so so simple!
3Tbs chia seeds
1 cup coconut cream(full fat)
2 tsp vanilla extract
2 tbp pure maple syrup
1 small banana, mashed
1 cup frozen pineapple
3Tbs cold watet
*Fresh passionfruit, coconut
In a small bowl, whisk together all ingredients well. Divide into airtight containers or jars and refrigerate for minimum 4 hours or overnight.
Add frozen pineapple and water to food processer, blend till smooth.
Remove chia pudding from fridge. Pour puree over top, add fresh passionfruit.
Serve and enjoy!
*any frozen friut could be used
* can be topped with any fresh fruit, coconut, yoghurt.
