Pastry》
2 cups plain flour
150g cold butter, cubes
Cold butter, cubed
1/3 cup cold water
Pinch of thyme
Salt
Quiche Filling》
1 large brow onion, sliced
1 large red onion, sliced
2 cloves of garlic, sliced
2tbs olive oil + 2 tbs butter
4 Eggs
2tbs ricotta
1/3 cup cream
1 cup cheese, grated ( 4 chesses mix is best)
Pinch mixed dried herbs
Salt & pepper
To make the crust place flour, butter, salt and thyme to a food processor, blitz until combined. Then add cold water and combine until mixture comes together into a dough. Remove from processor, knead on a floured surface into a ball cover with clingfilm place in the fridge for 30 minutes.
In a frying pan heat butter and oil add the sliced onion and garlic sauté them on low for 15 to 20 minutes or till caramelised.
Meanwhile add to a large bowl eggs, ricotta, cream and thyme/salt/pepper whisk till well combined. Add the ¾ of the grated cheese and combine well.
Remove pastry from fridge, on a lightly floured surface roll out the pastry with a rolling pin to the desired thickness and size. Line a tart shell with pastry (remove any excess overhang from the tin)
Place pastry in pre heated oven of 180° cook for 7 minutes, remove for oven add egg mixture, caramelised onion and remaining cheese bake for 35 to 40 minutes until golden-brown.
Serve with side salad.
Tips
*Any cheeses can be used in places of 4 cheese mix
*Use short crust pastry in place in making it.
*Store leftovers in airtight container in the fridge for 3days.
